1 cup rolled oats (gluten-free if needed)
½ cup desiccated coconut (plus extra for rolling)

8ā10 soft medjool dates, pitted
¼ cup nut butter (almond, cashew, or tahini for nut-free)
1 tsp vanilla extract
1 tbsp chia seeds (optional for omega-3 boost)
Pinch of sea salt
1ā2 tbsp water or coconut oil, if needed for texture
Blend oats and coconut in a food processor until they form a coarse flour.
